Original Whoppie Pies

  1. Preheat oven to 350.
  2. Line baking sheets with parchment paper.
  3. TO MAKE CAKES
  4. In a medium bowl whisk flour, cocoa powder, baking soda and salt, set aside
  5. In a large bowl combine butter with sugar and beat until light and fluffy.
  6. Add egg, milk and vanilla and beat in
  7. Add flour mixture and mix.just until.blended
  8. Drop by heaping tablespoons onto prepared pan.
  9. Spacing 2 inches apart.
  10. Smooth tops with wet finger for rounded tops.
  11. If you would like to decorate the.cakes with sprinkles or nuts, do it now before you bake them
  12. Bake 7 to 12 minutes depending on oven and size of cake.
  13. To check for doneness they should slightly spring back when touched or a toothpick comes out with just tiny crumbs.Cool a minute or two on baking sheet to firm up and transfer to a baking sheet to cool.
  14. FOR FILLING
  15. In a large bowl beat all filling ingredients until light and fluffy.
  16. Spread filling between two chocolate cakes to make the whoopie pie!
  17. Serve at room temperature,
