Chicken Fajita Kabobs
- 1 lb. (450 g) boneless skinless chicken breasts, cut into 1-inch pieces
- 1 each red and yellow pepper, cut into 1-inch pieces
- 1 red onion, cut into 12 wedges
- 1/3 cup Kraft Zesty Italian Dressing
- 1 Tbsp. fresh lime juice
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- 4 small whole wheat tortillas
- 1/3 cup Cracker Barrel Shredded Light Tex Mex Cheese
- Heat barbecue to medium-high heat.
- Thread chicken onto 8 skewers alternately with peppers and onions.
- Mix dressing, lime juice, garlic and cumin until blended; brush onto kabobs.
- Grill 7 to 8 min.
- on each side or until chicken is done.
- Remove from barbecue.
- Grill tortillas 15 to 30 sec.
- on each side or just until warmed.
- Remove chicken and vegetables from skewers; place on tortillas.
- Top with cheese.
