Curried Chicken With Almonds
- 1 chicken, jointed
- 3 clove garlic, smashed
- 1 1/2 tsp grated ginger
- 2 tbsp oil
- 1 tbsp butter
- 3 tbsp curry powder
- 3 tbsp salt
- 3 ripe tomstoes, finely chopped
- 1 bunch coriander, finely chopped
- 2 tsp garam masala
- 1/2 cup cream
- 125 grams ground almonds
- 2 onions, finely chopped
- Fry onion and garlic in butter and oil till soft.
- Add spice and saute for 1 minute, then add the salt, tomatoes and most of the coriander.
- Add chicken and stir until well coated with the spice mixture.
- Cover tightly snd simmer for about 45 minutes, depending on the size of the chicken pieces.
- Check from time to time to ensure it doesn't catch.
- Slowly stir through the garam masala, cream and almonds.
- Garnish with the remaining coriander and serve with rice.
