pumpkin cupcakes
- 2 cup sugar
- 2 cup AP flour
- 1/2 tsp salt
- 2 tsp cinnamon
- 2 tsp baking soda
- 2 cup pumpkin
- 1 cup vegetable oil
- 4 eggs
- Preheat oven to 350 degrees
- Mix all dry ingredients in a bowl and set a side.
- Mix all wet ingredients in separate bowl with mixer until all incorporated.
- Slowly mix in dry ingredients until a smooth batter
- Fill muffin cups 3/4 full.
- Bake for 20 to 25 minutes or toothpick test clean.
- Let cool completely and add cream cheese frosting.
- Try not to eat them all yourself.
