Roast Cod with Green Sauce
- 3/4 c. packed flat-leaf (Italian) parsley leaves
- 2 scallions
- 2 tbsp. olive oil
- 1 tsp. fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. Freshly ground pepper
- 6 piece cod or scrod fillet
- 1/4 tsp. salt
- 1 1/2 c. diced plum tomatoes
- 1/4 c. calamata olives (Greek olives)
- 1/2 tsp. minced garlic
- 1/4 tsp. Freshly ground pepper
- Heat oven to 425F.
- Lightly oil a jelly-roll pan or shallow roasting pan.
- In a blender or food processor, process sauce ingredients until smooth.
- Arrange cod in prepared pan.
- Sprinkle with salt, then spread evenly with sauce.
- Bake 10 to 15 minutes until fish is opaque in thickest part.
- Meanwhile, in a medium-size bowl, mix tomatoes, olives, garlic and pepper.
- Spoon over fish just before serving.
