Sardine Factory Fettuccine Alfredo

  1. In a large pot bring 8 quarts water to a boil; add salt.
  2. Very gently drop in the fettuccine.
  3. Stir with a wooden spoon for a few moments to separate noodles.
  4. Cook at a gentle boil for only a few minutes until al dente.
  5. Pour fettuccine into a colander to drain, and then into a large heated serving bowl.
  6. Cream butter until fluffy; add egg yolk and cream and beat constantly while adding cheese a tablespoon at a time.
  7. Add cheese mixture to fettuccine and season as desired with salt and pepper.
  8. Toss very gently.
