Sardine Factory Fettuccine Alfredo
- 2 gal. water
- 1 tbsp. salt
- 1 lb. fresh fettuccine
- 1/4 lb. butter
- 1 egg yolk
- 1/4 cup heavy cream
- 1/2 cup fresh grated Parmesan cheese
- Salt and pepper to taste
- In a large pot bring 8 quarts water to a boil; add salt.
- Very gently drop in the fettuccine.
- Stir with a wooden spoon for a few moments to separate noodles.
- Cook at a gentle boil for only a few minutes until al dente.
- Pour fettuccine into a colander to drain, and then into a large heated serving bowl.
- Cream butter until fluffy; add egg yolk and cream and beat constantly while adding cheese a tablespoon at a time.
- Add cheese mixture to fettuccine and season as desired with salt and pepper.
- Toss very gently.
