Low-Fat Banana Snack Cake
- 1 1/4 c. mashed bananas
- 3/4 c. fat and cholesterol-free egg substitute
- 1/2 c. buttermilk or plain low-fat yogurt, stirred
- 1/2 c. plus 2 Tbsp. packed brown sugar
- 1/3 c. apple sauce
- 1 tsp. vanilla extract
- 2 c. whole wheat flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. ground cinnamon
- Heat oven to 375u0b0.
- Lightly grease 9-inch square baking dish with nonstick cooking spray.
- In a large bowl, mix banana, egg substitute, buttermilk, 1/2 cup of the brown sugar, applesauce and vanilla extract until blended.
- Stir in flour, baking powder and baking soda until smooth.
- Scrape into prepared pan.
- Sprinkle with remaining 2 tablespoons brown sugar and cinnamon.
- Bake 20 to 25 minutes, until pick inserted in center comes out clean.
