Orrechiette with Broccolini, Chicken & Parmesan
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 cup fresh breadcrumbs
- 500g skinless chicken breast fillets, cut into strips Whole Foods 1 lb For $3.99 thru 02/09
- 1 bunch broccolini, cut in half and blanched
- 200g dried orrechiette pasta, cooked until al dente and drained
- 2 tablespoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- grated rind of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- salt and pepper to taste
- 1/3 cup KRAFT* Grated Parmesan Cheese
- 1/2 cup Italian flat-leaf parsley, roughly chopped
- Heat half the oil in a small non-stick frying pan over a medium high heat.
- Add the garlic and breadcrumbs and cook until golden and crisp.
- Heat the remaining oil in a large non-stick frying pan over a medium heat.
- Add the chicken strips and cook through.
- Add broccolini, cooked pasta, lemon juice, rind and seasonings and combine.
- Add the crispy breadcrumbs to the large frying pan along with the Parmesan and parsley.
- Heat through then serve immediately.
