Orrechiette with Broccolini, Chicken & Parmesan

  1. Heat half the oil in a small non-stick frying pan over a medium high heat.
  2. Add the garlic and breadcrumbs and cook until golden and crisp.
  3. Heat the remaining oil in a large non-stick frying pan over a medium heat.
  4. Add the chicken strips and cook through.
  5. Add broccolini, cooked pasta, lemon juice, rind and seasonings and combine.
  6. Add the crispy breadcrumbs to the large frying pan along with the Parmesan and parsley.
  7. Heat through then serve immediately.
