Bacon Gourmet Meatloaf
- 1 pound ground beef, lean
- 4 slices bacon
- 1/2 pound ground pork lean
- 1/2 pound ground veal
- 1 cup bread crumbs fresh, wheat
- 2 large eggs lightly beaten
- 1/2 teaspoon tomato juice
- 1/2 cup onions chopped
- 1/2 teaspoon marjoram
- 1/2 cup sweet red bell peppers chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 tablespoon worcestershire sauce
- 1 x worcestershire sauce
- Mix eggs, breadcrumbs, onion, V8 juice, green pepper and seasonings in a large bowl until well combined.
- Add meat, 1/4 pound at a time, and mix until combined.
- Shape into two round loaves and place two strips of bacon in an X across each.
- Place on a rack in a roasting pan and bake at 350F (180C) F for 1 hour.
