Coconut Streusel Muffins With Strawberry Butter

  1. Heat oven to 400F.
  2. Grease bottoms only of 12 muffin pan cups or line with paper baking cups; set aside.
  3. Combine 1/2 cup melted butter, half & half, eggs and almond flavoring in bowl; beat with whisk until smooth.
  4. Add 1 3/4 cups flour, 1/2 cup sugar, baking powder and salt; stir just until moistened.
  5. Gently stir in 1/2 cup coconut and 1 cup finely chopped strawberries.
  6. Spoon evenly into prepared muffin cups.
  7. Combine all streusel ingredients in small bowl; mix well.
  8. Sprinkle over muffin batter.
  9. Bake 18-22 minutes or until golden brown and toothpick inserted in center comes out clean.
  10. Cool in pan 5 minutes; remove to cooling rack.
  11. Combine all strawberry butter ingredients in bowl; beat at medium speed until well mixed.
  12. Serve with warm muffins.
