Smoky Black Eyed Peas And Ham Recipe

  1. Soak peas overnight in water to cover by 2 to 3 inches.
  2. Drain and add in them to a 6-8 qt pot together with 1/4 lb.
  3. of the ham and simmer.
  4. Bring to a boil, then reduce to a simmer.
  5. Heat the bacon fat or possibly oil in a large heavy skillet, add in the onion and celery.
