Crispy Fried Fish Recipe
- 2 egg yolks
- 1 tbsp. cider or possibly wine vinegar
- Salt and pepper
- Vegetable oil
- 1 c. flour
- 1 1/2 lbs. cod fillets
- Combine yolks, 1 c. water, vinegar, 1 tsp.
- salt, 1/4 tsp.
- pepper and 1 Tbsp.
- oil.
- Gradually stir into the flour till smooth.
- Let stand 30 min.
- In a deep fryer or possibly other deep pot, heat about 3 inches of oil to 375 degrees.
- Cut fish into serving pcs.
- Dip fish into batter and let excess drip off.
- Slip a few pcs at a time into warm oil and cook till golden, about 5 min.
- Drain on paper towels.
