Ground Meat Main Dish
- 1 lb. ground meat (beef or turkey)
- 1 c. soft bread crumbs
- 1/4 c. milk
- 1 (8 oz.) can pineapple chunks
- 1/2 c. soy sauce
- 2 Tbsp. oil
- 1 tsp. ground ginger
- 1/2 tsp. dry mustard
- 1/4 tsp. garlic powder
- 2 small onions, quartered
- 1 medium green pepper, cut into 1-inch pieces
- 12 cherry tomatoes
- cooked rice (1/2 c. per serving)
- In a bowl, combine meat, crumbs and milk.
- Mix well.
- Shape into 36 meat balls.
- Drain pineapple (keep juice).
- In a 12 x 7 1/2 x 2-inch baking dish, combine pineapple juice, soy sauce, oil and seasonings.
- Add meat balls.
- Cover.
- Refrigerate overnight. Turn once.
- Drain meat balls.
- Keep marinade.
