Baked Avocado
- 3 whole Ripe Avocados, Peeled, Pit Removed And Cut Into 1/2 Inch Wedges
- 13 cups Flour
- 1 teaspoon Chipotle Powder
- 2 whole Eggs, Beaten
- 1 cup Panko Bread Crumbs
- 1 dash Olive Oil Spray
- Preheat the oven to 450 F.
- Make three bowls.
- One with flour and chipotle powder, one with beaten eggs, and one with panko breadcrumbs.
- Dip the avocado slices in flour until covered and shake off excess.
- Dip in the eggs and then dip in the panko to coat.
- Yep, your hands will be a mess!
- Place the avocados in a single layer on a baking sheet and spray generously with a cooking spray.
- Bake for 10-15 minutes until crispy and light brown.
- Serve warm with your preferred dipping sauce.
