Microwave Tamale Pie Recipe
- 1 sm. box cornbread mix (Jiffy, Martha White)
- 1 egg
- 1/3 c. lowfat milk
- 1 pound grnd beef
- 1/2 pound sausage
- 1/2 c. minced onion
- 1 clove garlic, chopped
- 1 (16 ounce.) can liquid removed corn
- 1 sm. can tomato paste
- 1 (16 ounce.) can tomatoes, liquid removed and sliced
- 1 1/2 teaspoon chili pwdr
- 1 teaspoon salt
- Mix first 3 ingredients together in a small bowl; set aside.
- Stir together grnd beef, sausage, onion, and garlic in large glass baking dish.
- Microwave on high 5-9 min.
- Drain and add in rest of ingredients.
- Mix into meat and press into dish.
- Cover bottom, uniform thickness.
- Microwave on high 4-8 min.
- Spread cornbread mix on top; microwave on medium-high 7 min.
- Increase to high and microwave till cornbread is done, approximately 7 min.
- Then top with 1 c. shredded cheddar cheese.
- Serve with heated salsa or possibly picante sauce.
