Sig's potato salad with sun-dried tomato, chorizo and pistachio nuts,
- 100 grams finely chopped , cured chorizo
- 1 and a half kg baby new potatoes cut into large chunks
- 70 grams or 2/3 of a cup drained sun-dried tomatoes ,sliced
- 2 tbsp chopped pistachio nuts
- 2 clove garlic.,chopped
- 1 good.pinch each salt and pepper
- 3 egg yolk
- 2 tbsp lemon juice
- 3/4 cup olive or vegetable oil
- 1 small handful of fresh shredded basil
- cut the chorizo into small cubes or strips.
- boil the potatoes ,steam or microwave them until tender but still firm .drain and cool,
- add potatoes,chorizo,tomatoes,garlic and nuts in bowl.,season to taste
- make mayonnaise, beat yolks and juice until smooth, gradually work 1/4 of oil in beating all the time,.pour in remaining oil in a steady stream beating all the time.
- add basil ,pour over salad mix in well
