Bundt Cake Stuffed With Fall Fruits (Pareve)

  1. Preheat oven to 350F
  2. Spray a 12-cup bundt pan with non-stick cooking spray.
  3. In mixer bowl, stir together flour, sugar, baking powder, oil, eggs, vanilla extract and orange juice.
  4. Mix at medium-low speed for 10 minutes.
  5. In a separate bowl, combine the peach, plums, apricots, dates, sugar, cardamom.
  6. Spoon half the batter in prepared pan.
  7. Spread about 3/4 fruit mixture over.
  8. Top with remaining batter and fruit mixture.
  9. Bake in preheated oven for 1 1/4 hours or until a toothpick comes out clean when inserted in center.
  10. Cool on a wire rack.
  11. Slice with a serrated knife.
  12. Freezes well.
