Rolo Cookies - Chocolate with Caramel Center Cookies

  1. In a large mixing bowl, cream butter, 1 cup (225 ml) sugar and brown sugar.
  2. Add eggs and vanilla; mix well.
  3. Combine and sift flour, cocoa and baking soda; add to creamed mixture and beat slowly until it is just combined.
  4. Stir in 1/2 cup (125 ml) pecans until blended.
  5. Shape dough by tbspfuls around each candy.
  6. In a small bowl, combine the remaining pecans and sugar; dip each cookie halfway.
  7. Place with nut side up on ungreased cookie sheets.
  8. Bake at 375 degrees (200 C.) for 7-10 minutes or until top is slightly cracked.
  9. Cool for 3 minutes; remove to wire racks to cool completely.
