Chocolate Raspberry Pie
- 9 inches ready-made pie crusts
- 12 cup raspberry jam
- 1 cup sugar
- 14 cup all-purpose flour
- 12 teaspoon salt
- 2 eggs, beaten
- 12 cup unsalted butter, melted (1 stick)
- 1 cup semi-sweet chocolate chips
- Preheat the oven to 350.
- Thaw or prepare the pie crust according to the package directions.
- Melt the jam, and let it cool while you assemble the pie.
- In a medium sized mixing bowl, combine the sugar, flour, and salt with a fork to sift.
- Add the eggs and stir.
- Add the butter and melted jam, and stir.
- Stir in the chocolate chips, then pour into the pie crust.
- Bake on a cookie sheet (to prevent oven splillage) for 45 minutes, or until the top has firmed.
- Let cool before serving.
- You may also serve it chilled.
