red quinoa-avocado salad

  1. cook the quinoa as directed, chill for 20 minutes
  2. chop cilantro finely, slice onions thinly, dice tomatoes, peel and pit avocado then cut into cubes
  3. combine all ingredients including dressing until well mixed.
  4. season with salt and pepper to taste.
