red quinoa-avocado salad
- 7 oz red quinoa
- 12 oz super-sweet corn
- 1 cup fresh cilontro
- 1 cup green onion
- 2 plum tomatoes
- 2 avocados
- 1/2 cup lemon vinaigrette
- 1/2 tsp salt
- 1/2 tsp pepper
- cook the quinoa as directed, chill for 20 minutes
- chop cilantro finely, slice onions thinly, dice tomatoes, peel and pit avocado then cut into cubes
- combine all ingredients including dressing until well mixed.
- season with salt and pepper to taste.
