Chicken Parmigiana

  1. Place the 2 chicken breasts in a small baking dish.
  2. Generously salt and pepper each one.
  3. Then graciously sprinkle with oregano and the garlic powder.
  4. Fill the pan with the sauce until the chicken breasts are completely covered.
  5. Bake at 350F for about 45 minutes.
  6. Remove the pan from the oven and cover each chicken breast with your favorite cheese.
  7. I used some leftover slices of Swiss cheese that needed to be used up.
  8. I really dont like to waste food.
  9. Bake for another 5-10 minutes, just until the cheese is melted and gooey.
  10. Remove from the oven and let it rest for about 5 minutes or so.
  11. Serve over pasta, with a salad and garlic bread.
  12. I prefer mine with a glass of wine.
  13. For all of us single girls, gobble up one chicken breast for dinner, take the other to work for lunch or another evening meal later in the week.
  14. Enjoy!
