Latin Confetti Salad

  1. Combine first 8 ingredients in large bowl.
  2. Season with salt and pepper.
  3. Mound salad on platter.
  4. Garnish with onion rings and avocado slices.
  5. Serve, passing sauce separately.
  6. Blend all ingredients in processor using on/off turns just until cucumber is finely chopped.
  7. Season with salt and pepper.
  8. Transfer to small bowl.
  9. (Can be prepared 1 hour ahead.
  10. Cover and chill.)
  11. Makes 3 cups.
