Brandied Pears Recipe

  1. Pare, halve and core pears.
  2. Combine sugar and water to make syrup.
  3. Cook pears in syrup one layer at a time, just till tender (about 5 min).
  4. Place cooked pears in a large bowl; set aside.
  5. After all pears are cooked, continue cooking syrup till thickened (about 15 min).
  6. Remove from heat.
  7. Add in brandy.
  8. Pack warm pears into jars; cover with warm syrup leaving 1/4 inch headspace.
  9. Adjust lids, process 15 min in a boiling water canner.
  10. Yieldsapproximately 4 qts.
