Brandied Pears Recipe
- 10 lb ripe, unblemished pears
- 3 lb granulated sugar
- 4 c. water
- 3 c. white brandy
- Pare, halve and core pears.
- Combine sugar and water to make syrup.
- Cook pears in syrup one layer at a time, just till tender (about 5 min).
- Place cooked pears in a large bowl; set aside.
- After all pears are cooked, continue cooking syrup till thickened (about 15 min).
- Remove from heat.
- Add in brandy.
- Pack warm pears into jars; cover with warm syrup leaving 1/4 inch headspace.
- Adjust lids, process 15 min in a boiling water canner.
- Yieldsapproximately 4 qts.
