Zucchini with Sour Cream and Chives with Baked Orange Roughy

  1. For zucchini: Saute garlic and onion.
  2. Slice zucchini into thin slices.
  3. (Or, slice and quarter if the zucchini is large.)
  4. Add zucchini and saute until zucchini starts to turn transparent.
  5. Add creamer and mix.
  6. Add sour cream and mix.
  7. Add chives and parsley.
  8. Mix until everything is heated and sauce thickens.
  9. For Orange Roughy: Preheat oven to 350-degree F.
  10. Rinse and dry fish.
  11. Spray non-stick onto baking sheet and fish.
  12. Sprinkle fish lightly with seasoned salt.
  13. Sprinkle fish with basil.
  14. Bake 10- 15 minutes or until flaky.
  15. Serve immediately.
