Zucchini with Sour Cream and Chives with Baked Orange Roughy
- 1 large zucchini or 2 -3 small thinner zucchini
- 1 medium onion, chopped
- 1 clove garlic, minced
- 14-12 cup chives, chopped
- 3 -4 tablespoons half-and-half
- 14 cup fat free sour cream
- 14 cup parsley, chopped
- seasoning salt
- ground black pepper
- 1 lb orange roughy
- butter-flavored cooking spray
- 12-1 teaspoon dried basil

- For zucchini: Saute garlic and onion.
- Slice zucchini into thin slices.
- (Or, slice and quarter if the zucchini is large.)
- Add zucchini and saute until zucchini starts to turn transparent.
- Add creamer and mix.
- Add sour cream and mix.
- Add chives and parsley.
- Mix until everything is heated and sauce thickens.
- For Orange Roughy: Preheat oven to 350-degree F.
- Rinse and dry fish.
- Spray non-stick onto baking sheet and fish.
- Sprinkle fish lightly with seasoned salt.
- Sprinkle fish with basil.
- Bake 10- 15 minutes or until flaky.
- Serve immediately.
