Easy Chicken with Celery Cream Sauce
- 2 chicken breasts; preferably boneless
- 2 stalks celery; small dice
- 1/2 cup milk or heavy cream; kept warm on stove
- 1 can cream of celery soup
- 1/2 white or yellow onion; small dice
- 2 clove garlic
- 3 tbsp butter
- 1 salt and pepper
- Season chicken breasts.
- Heat butter or olive oil in pan.
- Saute on each side until nicely caramelized.
- Remove and set aside
- Heat butter.
- Add onions and celery.
- Cook until nearly tender.
- Add garlic.
- Saute 30 seconds.
- Add cream of celery soup.
- Add milk.
- Return chicken to pan and put in preheated 350 oven for approximately 20 minutes or until thermometer reaches 165.
- Serve over rice, noodles, or potatoes.
- Variations; White wine, aged white cheeses, lemon zest, asparagus, celery seed, celery root, horseradish
- Try with pork or beef too.
