Breeden Liles's Brunswick Stew Recipe

  1. Combine first 6 ingredients in a large Dutch oven or possibly stock pot; bring to a boil.
  2. Cook, uncovered, 15 min.
  3. Reduce heat, and simmer, uncovered, 1 hour.
  4. Remove chicken from broth, reserving broth in Dutch oven; throw away bay leaves and celery tops.
  5. Cold chicken; bone and coarsely chop meat.
  6. Set aside.
  7. Add in onion and next 4 ingredients to broth; bring to a boil.
  8. Cook 15 min.
  9. Reduce heat and simmer 1 hour, stirring often.
  10. Cook grnd beef in a skillet over medium heat till browned, stirring to crumble.
  11. Drain well; add in grnd beef, chicken, pork, and remaining ingredients to stew.
  12. Simmer, uncovered, 2 hrs, stirring occasionally.
  13. Yield: 4 1/2 qts.
