Breeden Liles's Brunswick Stew Recipe
- 1 (3 lb.) broiler-fryer, smoked and skinned
- 4 bay leaves
- 6 celery tops with leaves
- 4 1/2 c. water
- 1 1/2 teaspoon salt
- 1 teaspoon warm sauce
- 3 med. onions, minced
- 1 (16 ounce.) pkg. frzn whole kernel corn
- 1 (16 ounce.) pkg. frzn lima beans
- 1 (16 ounce.) pkg. frzn English peas
- 1 (28 ounce.) can crushed tomatoes, undrained
- 1 pound grnd beef
- 1 pound smoked pork, minced
- 1/2 c. Worcestershire sauce
- 2 teaspoon garlic salt
- 2 teaspoon grnd allspice
- 1 to 2 teaspoon black pepper
- 1/2 to 1 teaspoon red pepper
- Combine first 6 ingredients in a large Dutch oven or possibly stock pot; bring to a boil.
- Cook, uncovered, 15 min.
- Reduce heat, and simmer, uncovered, 1 hour.
- Remove chicken from broth, reserving broth in Dutch oven; throw away bay leaves and celery tops.
- Cold chicken; bone and coarsely chop meat.
- Set aside.
- Add in onion and next 4 ingredients to broth; bring to a boil.
- Cook 15 min.
- Reduce heat and simmer 1 hour, stirring often.
- Cook grnd beef in a skillet over medium heat till browned, stirring to crumble.
- Drain well; add in grnd beef, chicken, pork, and remaining ingredients to stew.
- Simmer, uncovered, 2 hrs, stirring occasionally.
- Yield: 4 1/2 qts.
