Liver Fricassee Recipe
- 1 pound beef liver, cut into 2 x 1/2 inch strips
- 3 tbsp. flour
- 1 1/2 teaspoon salt
- 3 tbsp. fat
- 3 c. water
- 1/2 c. catsup
- 1 1/2 tbsp. salt
- 2 c. potatoes, peeled & diced
- 1 1/2 c. carrots, diced
- 1 med. onion, minced
- 4 stalks celery, cut into sm. pcs
- Dredge liver in flour and 1 1/2 tsp.
- salt, brown in fat.
- Combine water, catsup, salt and add in to liver.
- Bring to a boil.
- Add in potatoes, carrots, onions and celery.
- Cover and cook gently 30 min.
- Serves 6.
