Oven Fried Onion Rings

  1. Process crackers and potato chips in a food processor.
  2. Whisk the buttermilk, 1/4 cup flour, cayenne pepper, egg, salt and pepper to form batter.
  3. Place the remaining flour, batter mixture, and saltine/potato chip crumbs in separate bowls.
  4. Preheat oven to 450F.
  5. Take each onion ring and drop into the flour to create a dry surface for the batter to cling to.
  6. Tap off excess flour and drop ring into batter.
  7. Using a fork, lift the ring out of the batter and allow excess to drip off and then drop into saltine/chip crumbs.
  8. Press the coating onto the ring and then transfer to a plate.
  9. Pour 3 T. vegetable oil onto a half sheet pan and place into hot oven for 8 minutes.
  10. Remove pan and tilt to distribute oil.
  11. Place the onion rings on the pan making sure none touch.
  12. Put the pan back in the oven for 8 minutes.
  13. Flip rings over and bake another 8 minutes.
  14. Remove from oven, salt & enjoy.
