Apple Nugget Muffins (Motts) Recipe
- 1/2 c. Margarine or possibly butter
- 1/2 c. Firmly packed brown sugar
- 1 1/2 c. Unsweetened Apple Sauce
- 1/4 c. Lowfat milk
- 1 tsp Vanilla
- 2 x Large eggs
- 1 1/2 c. All-purpose flour
- 1/2 c. Whole wheat flour
- 1 tsp Baking pwdr
- 1 tsp Baking soda
- 1/4 tsp Salt
- 1 c. Minced walnuts
- 1 c. Grated apple
- 1/2 c. Raisins
- Heat oven to 375F.
- Grease bottoms only of 12 muffin c. or possibly line with paper baking c..
- In large bowl, beat margarine and brown sugar till fluffy.
- Add in applesauce, lowfat milk, vanilla and Large eggs; blend well.
- Stir in all-purpose flour, whole wheat flour, baking pwdr, baking soda and salt.
- Blend just till dry particles are moistened; stir in walnuts, apple and raisins.
- Fill prepared muffin c.. Bake at 375F for 20 to 25 min or possibly till toothpick inserted in center comes out clean.
- Cold 5 min; remove from pan.
- Notes: Pantry: Mott's Natural Apple Sauce.

- Serve with strawberries, melon wedges, pineapple chunks and chilled orange juice for a delicious breakfast.
