Peanut Burgers

  1. Mix the cumin, dill, coriander and fennel powders.
  2. With a grinder or food processor, grind the peanuts, celery, carrots, onions, parsley and seeds into fine particles (but not into a powder or puree).
  3. Mix in the powder mixture.
  4. Turn the mixture in to a bowl, and knead hard for 1 minute.
  5. If mixture needs more binding, add 1-2 tbsp water.
  6. Mixture will still be somewhat dry.
  7. Lightly oil a cookie sheet.
  8. Drop the mixture into 4 large or 6 medium mounds.
  9. Flatten into patties with back of a spoon.
  10. Bake at 350F for 15-20 minutes, or until burgers are golden and crisp to the touch.
  11. Serve as you would burgers.
