Peanut Burgers
- 1 cup roasted peanuts
- 12 cup celery, diced
- 12 cup carrot, diced
- 12 cup onion, diced
- 12 cup parsley, chopped
- 13 cup sesame seeds
- 1 teaspoon ground cumin
- 1 teaspoon dried dill
- 1 teaspoon ground coriander
- 12 teaspoon ground fennel
- Mix the cumin, dill, coriander and fennel powders.
- With a grinder or food processor, grind the peanuts, celery, carrots, onions, parsley and seeds into fine particles (but not into a powder or puree).
- Mix in the powder mixture.
- Turn the mixture in to a bowl, and knead hard for 1 minute.
- If mixture needs more binding, add 1-2 tbsp water.
- Mixture will still be somewhat dry.
- Lightly oil a cookie sheet.
- Drop the mixture into 4 large or 6 medium mounds.
- Flatten into patties with back of a spoon.
- Bake at 350F for 15-20 minutes, or until burgers are golden and crisp to the touch.
- Serve as you would burgers.
