Flapper Pie

  1. Combine crumbs, sugar and cinnamon; blend in butter.
  2. Set 1/4 cup aside.
  3. Press remainder onto bottom and sides of 9 inch pie plate.
  4. Bake in 375 degree F oven for 8 minutes; cool.
  5. FILLING: In saucepan, mix sugar with cornstarch; blend in milk.
  6. Cook over medium heat, stirring, until boiling; stir a little into yolks, then retUrn to the saucepan.
  7. Cook over low heat, stirring, for 2 minutes or until thickened.
  8. Remove from heat; add vanilla and cool slightly.
  9. Pour into pie crust.
  10. MERINGUE: Beat egg whites with cream of tartar until soft peaks form; gradually beat in sugar until stiff peaks form.
  11. Spread over filling, sealing to crust.
  12. Top with reserved crumbs.
  13. Bake in 400 degree F oven for 5 minutes or until lightly browned.
  14. Cool to room temperature, about 4 hours.
