Easy & Delicious! Aubergine and Minced Meat Curry

  1. Cut the aubergines into bite size rolling slices, and chop the onion.
  2. Put 3 tablespoons of oil in a pan, stir fry the aubergines and transfer to a plate.
  3. Add 1 tablespoon of oil in the pan and stir fry the minced meat and onions over medium heat.
  4. Then add the potatoes.
  5. (if you want to save time, microwave the potatoes before you stir fry.)
  6. Refer to the packet of the curry roux used, add water to the pan.
  7. Add the soup stock cube and simmer until the potatoes are cooked thoroughly.
  8. Meanwhile, skim the scum (optional).
  9. Dissolve the curry roux, then add milk and soy sauce.
  10. Add the cooked aubergines.
  11. It's done.
  12. You can eat it straight away, but let it rest overnight.
