Breaded chicken cutlets

  1. wash and pat dry chicken breasts.
  2. trim off excess fat and butterfly breasts.
  3. combine all dry ingredients thoroughly.
  4. bread chicken breasts using up nearly all of the dry mixture.
  5. cook in 1/2 cup light olive oil over med-high heat for 2-3min per side or until breading is golden brown.
