Arugula And Smoked Mozzarella Salad With Lemon Vinaigrette Recipe
- 1 head radicchio - (12 ounce) halved, cored, and very thinly sliced
- 3 c. arugula - (packed)
- 1/2 c. thinly-sliced liquid removed oil-packed sun-dry tomatoes
- 2 Tbsp. fresh lemon juice
- 1/4 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 6 Tbsp. pine nuts toasted
- 9 ounce smoked mozzarella sliced 1/8" to
- 1/4 x "-thk
- Mix radicchio, arugula, and tomatoes in large bowl.
- Place lemon juice in small bowl.
- Gradually whisk in extra virgin olive oil.
- Season dressing with salt and pepper.
- Add in to salad; toss.
- Divide among 6 plates.
- Sprinkle salads with nuts.
- Serve with cheese.
- This recipe yields 6 servings.
