Chocolate Frosting
- 2 cups semi-sweet chocolate chips
- 1 teaspoon instant coffee granules
- 34 cup strong coffee
- 1 teaspoon almond extract
- 1 cup cold butter or 1 cup margarine, cut into small pieces
- In a small saucepan, melt chocolate over low heat, stirring frequently.
- Add coffee granules, strong coffee, and almond extract, and stir well.
- Remove from heat, and, using wooden mixing spoon, beat in butter or margarine, a few pieces at a time until smooth.
- Transfer to medium mixing bowl, cover, and refrigerate until thickened to spreading consistency, about 30 minutes.
