Chicken Broccoli Crepes Recipe
- 1 (10 ounce.) pkg. frzn cut broccoli
- 2 tbsp. butter
- 2 tbsp. flour
- 1/4 teaspoon salt
- 1/4 teaspoon grnd nutmeg
- 1 1/2 c. lowfat milk
- 3/4 c. shredded Swiss cheese
- 2 c. finely minced cooked chicken
- 12 crepes
- Cook broccoli according to package, drain and set aside.
- For sauce, in medium saucepan, heat butter.
- Blend in flour, salt and nutmeg.
- Add in lowfat milk all at once.
- Cook and stir till thickened and bubbly.
- Cook, stirring constantly for 2 min more.
- Add in Swiss cheese, stir till melted, set aside.
- For filling, combine chicken broccoli and 1 c. of the cheese sauce.
- Spoon about 1/2 c. filling along center of unbrowned side of each crepe.
- Roll up crepes, place seam side up in baking dish.
- Pour remaining cheese sauce over crepes.
- Sprinkle with paprika if you like.
- Cover, bake in 375 degree oven for 18 to 20 min.
