Herbed Bistro Chicken

  1. Preheat oven to 375 degrees.
  2. Rinse chicken with cold water; pat dry.
  3. Trim excess fat.
  4. Loosen skin from thigh and leg by inserting fingers, gently pushing between skin and meat.
  5. Combine rest of ingredients (basil thru pepper),.
  6. Rub herb mixture under loosened skin.
  7. Place chicken on a broiler pan.
  8. Insert meat thermometer into meaty part of thigh, making sure not to touch bone.
  9. Bake at 375 degrees for 45 minutes or until thermometer registers 180 degrees.
  10. Cover chicken loosely with foil; let stand 10 minutes.
