Pork with Broccoli and Rice
- 1 lb. Pork sliced into bite size pieces
- 1 large head Broccoli, florets only
- 3 cloves Garlic, chopped
- 1 tsp. Salt
- 1 tsp. Pepper
- 2 tbs. oil
- 1 tbs. Butter
- 1 med. Onion, diced
- 2 tbs. Beer or Wine (optional)
- 1 cup White Rice
- 2 cups Beef broth
- 1/4 cup milk
- 1/3 cup Parmesan Cheese
- Stir fry first 5 ingredients in 2 tbs.oil till meat is white.
- Remove and keep warm.
- Add butter and onion to same pan and stir fry 2 mins.
- Add rice.
- Add beer and stir till absorbed.
- Add broth, boil, then simmer until soft (about 20 mins.)
- Add milk and stir.
- Add reserved pork mixture and mix well.
- Top with cheese.
