Fried Rice
- 2 eggs, slightly beaten
- 1 c. bean sprouts
- 1/2 c. canned mushrooms, diced
- 1 tsp. salt
- 3 c. cooked rice
- 2 Tbsp. dark soy sauce
- 1 c. diced meat (any)
- 2 green onions, chopped
- 5 Tbsp. oil (for stir-frying)
- Prepare veggies.
- If using canned bean sprouts, rinse, drain and pat dry.
- Work on high heat.
- Add 1 tablespoon oil; heat until hot.
- Add eggs; stir until soft scrambled.
- Put on side of wok. Add 2 tablespoons oil, bean sprouts, salt and mushrooms.
- Stir-fry 1 minute; move up on side with eggs.
- Remove wok from heat; wipe bowl with paper towel.
- Return to heat.
- Add remaining oil and heat; add rice and stir until hot.
- Add soy sauce; continue stirring until well mixed.
- Add green onions and meat.
- Return remaining ingredients to wok bowl; stir-fry for 1/2 minute.
