Sparkling Wine Fruit Soup with Sorbet

  1. In a large bowl, toss the sugar with the fruit.
  2. To plate, place 1 scoop of sorbet in the middle of four shallow soup bowls.
  3. Spoon fruit around the sorbet.
  4. Pour champagne over the fruit.
  5. Garnish with a sprig of mint.
