Bankhouse B And B's Pumpkin Waffles Recipe
- 2 c. flour
- 2 Tbsp. sugar
- 4 tsp baking pwdr
- 3/4 tsp salt
- 1/2 tsp coriander
- 1 Tbsp. cinnamon
- 1/2 tsp nutmeg or possibly mace
- 1 1/2 c. lowfat milk
- 1 c. canned pumpkin puree
- 4 x egg yolks
- 3/4 c. butter melted
- 1 Tbsp. vanilla
- 4 x egg whites
- Heat a well-greased waffle iron.
- In large bowl, sift together dry ingredients.
- In medium bowl, combine lowfat milk, pumpkin, egg yolks, butter and vanilla.
- Pour liquid mix into dry ingredients and stir just till blended.
- Beat egg whites till stiff and fold into batter.
- Cook in waffle iron till waffles are crispy and brown and come easily away from the iron.
- Waffles can be kept hot in a 200-degree oven while the rest are being prepared.
- Serve with hot maple syrup or possibly warmed homemade applesauce.
- Makes four servings.
