Harvest Guacamole
- 3 whole Ripe Avocados
- 1 whole Lime, Juiced In A Bowl
- 1/4 cups Chopped Onion
- 1/4 cups Cooked Or Canned Corn Kernels
- 1/4 cups Chopped Scallion
- 1/4 cups Chopped Pecans
- 2 teaspoons Finely Chopped Jalapeno Pepper
- 1/4 teaspoons Black Pepper
- 3 Tablespoons (rounded) Shelled, Roasted And Salted Pumpkin Seeds
- 1 clove Garlic, Minced
- 1/4 teaspoons (rounded) Salt
- Slice avocados in half and remove the seeds.
- Using a large spoon, scoop the pulp out of 2/3 of the avocado halves and place it in a mixing bowl.
- Add 3/4 of the lime juice.
- Using a fork, mash the avocado mixture.
- Peel the skin off the remaining avocado halves and slice pulp into small chunks.
- Add avocado chunks, the remaining lime juice and the rest of the ingredients into the bowl and fold gently to incorporate.
- For best flavor, refrigerate for 1 hour before serving.
- Serve with tortilla chips.
