Pesto Baked Potatoes
- 4 potatoes, baked in oven
- microwave
- 1/4 cup pesto
- 1/4 cup light
- fat-free sour cream
- Grated asiago
- Parmesan cheese, to taste
- Slice off top quarter of baked potatoes.
- Scoop out interior and break up with a fork.
- Stir in pesto, sour cream and cheese.
- Mound in shells.
- Sprinkle with more cheese.
- Broil 4 inches from heat, until golden.
