Pesto Baked Potatoes

  1. Slice off top quarter of baked potatoes.
  2. Scoop out interior and break up with a fork.
  3. Stir in pesto, sour cream and cheese.
  4. Mound in shells.
  5. Sprinkle with more cheese.
  6. Broil 4 inches from heat, until golden.
