Colorful Fall Kabocha Squash and Sweet Potato Salad
- 1/4 Kabocha squash
- 1/2 Sweet potato
- 5 tbsp Mayonnaise
- Prep the vegetables.
- Cube the kabocha squash and sweet potato and boil.
- Put the sweet potato pieces in a bowl of water first to get rid of any bitterness.
- Boil both the sweet potato and kabocha squash starting with cold water.
- When both are tender, drain well and transfer to a bowl.
- Mix in the mayonnaise while still warm.
- Cool in the refrigerator before serving.
- Add some raisins to taste.
