Crab and Rice
- 1 cup imitation crabmeat
- 2 slices lowfat turkey ham, chopped
- 2 garlic cloves, minced
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon half salt, half salt substitute mixture
- 3/4 cup long grain white rice, rinsed and drained
- 1 cup tomato sauce
- 1 cup hot water
- 1 cup fat-free evaporated milk
- 1 1/2 teaspoons coconut extract
- 1 6-ounce jar red pimento, cut into strips, drained
- In a small bowl, soak crabmeat in water for at least 2 hours; drain and set aside.
- In a large skillet, over low heat, saute turkey ham with garlic, cilantro, and salt; stir constantly.
- Add crabmeat, rice, tomato sauce, water, milk, and coconut extract; mix well; simmer until rice is cooked (about 35 minutes).
- Decorate with red pimiento strips.
