Crab and Rice

  1. In a small bowl, soak crabmeat in water for at least 2 hours; drain and set aside.
  2. In a large skillet, over low heat, saute turkey ham with garlic, cilantro, and salt; stir constantly.
  3. Add crabmeat, rice, tomato sauce, water, milk, and coconut extract; mix well; simmer until rice is cooked (about 35 minutes).
  4. Decorate with red pimiento strips.
