Quick 'n' Easy Italian Chicken & Pasta for Two
- 1-1/2 cups whole wheat penne pasta, uncooked
- 1/4 cup KRAFT Lite House Italian Dressing, divided
- 1/2 lb. boneless skinless chicken breasts, cut into strips
- 1/2 cup fat-free reduced-sodium chicken broth
- 1 cup small broccoli florets
- 1 small red pepper, cut into strips
- 1 cup sliced fresh mushrooms
- 1/2 cup thin carrot slices Target 2 lb For $3.00 thru 02/06
- 1/2 tsp. Italian seasoning
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- Cook pasta as directed on package, omitting salt.
- Meanwhile, heat 2 Tbsp.
- dressing in large nonstick skillet on medium-high heat.
- Add chicken; cook and stir 1 min.
- Add broth and vegetables; stir.
- Bring to boil; cover.
- Simmer on low heat 5 min.
- Drain pasta.
- Add to chicken mixture along with the remaining dressing and Italian seasoning; mix lightly.
- Simmer 2 to 3 min.
- or until heated through, stirring occasionally.
- Sprinkle with cheese.
