Baked Apples With Dried Apricots

  1. Preheat oven to 350F.
  2. Mix 1/4 cup brown sugar and 1/3 cup water in an 8-inch square baking dish.
  3. Peel tops of apples; core with melon baller (leave the bottom intact).
  4. In a bowl, toss dried apricots, brown sugar, ginger and cinnamon.
  5. Fill apples; place in dish.
  6. Dot each apple with 1/4 tablespoons unsalted butter.
  7. Bake basting occasionally, until tender, 40-50 minutes.
  8. Drizzle with pan syrup.
  9. Serve with a ice cream.
