Chicken Madeira - Chicken With Mushrooms and Madeira

  1. In large skillet, saute sliced mushrooms in 3 tbsp (45 ml).
  2. butter.
  3. Remove mushrooms to bowl.
  4. Add 2 tbsp (30 ml).
  5. butter, melt.
  6. Saute chicken brests in melted butter till brown on both sides.
  7. Remove from pan.
  8. Add Madeira and white wine to skillet and reduce by 1/2.
  9. Add chicken breasts and sauteed mushrooms back in skillet.
  10. Salt and pepper to taste.
  11. Cover and simmer gently for 15 minutes or till chicken is just cooked.
  12. Remove chicken breasts to heated platter or plates.
  13. Reduce sauce briefly and spoon with mushrooms over chicken.
