Negi-Meshi (Rice with Leeks) from a Ramen Noodle Bar

  1. Chop the leek and scallion into small rounds.
  2. If you'd like, soak in water to remove the spiciness.
  3. Mix all condiments and microwave.
  4. 10 to 20 seconds is fine, since it's only to evaporate the alcohol.
  5. Mix the condiments from step 2.
  6. Add sesame oil.
  7. Scoop rice into a rice bowl.
  8. Top with pepper that is coarsely ground, the condiments from step 3, leek, and scallions.
  9. Sprinkle toasted sesame seeds and serve.
