Tuscan Sausage and Potato Soup #5FIX

  1. Crumble the Italian Sausage into a heavy bottomed soup pot and saute until well browned.
  2. Remove the sausage from the pot.
  3. Add the Simply Potatoes Diced Potatoes with Onions and saute for 2 or three minutes.
  4. Add the Chicken Stock and simmer until potatoes are tender, about 15 minutes.
  5. Using a potato masher or immersion blender, mash the potatoes in the pot leave it quite chunky, do not totally blend.
  6. Return the Italian Sausage to the pot along with the kale and cannellini beans.
  7. Simmer for 5 minutes.
  8. Season with salt and pepper if desired.
  9. Enjoy!
